Centuries ago, Arawak Indians of Jamaica preserved pork with spices and peppers and cooked on open fire pits, creating what we know today as “Jerk” cooking. Today, Jamaicans blend native herbs, spices, and Scotch Bonnet peppers to create an exciting hot, sweet, and spicy flavor.
